The art of producing pure wheatflour has been passed down through our family for over seven generations. To this day, we still use the original flour scale that our founder and forefather, Juan Antonio Coto, used all those years ago – a time-honored icon of our dedication to fairness and excellence.
Juan Antonio Coto, our founder, was known far and wide for being extremely fair. Each night he would clean and calibrate his scales to ensure they read correctly. It was this uncompromising business ethic that drew customers in from miles around.
Sadly, our mill had the misfortune of burning down in 1922, but the scales were saved, and when Juan Antonio eventually passed away, his eldest son Alberto worked hard to realise his dream. Most importantly, this included the daily calibration of the scales, which have ever since become the emblem of the Molino Dé Fenix!
Did you know? One of our favorite family traditions is to weigh our newborn sons on the original flour scale. After each baby is weighed, we record it in our family mill book. The heaviest boy of each generation is given the responsibility of calibrating the scale each night, but only once they turn 18!
